It's my favorite time of the year - Super Bowl Weekend! And I am sharing one of my favorite flatbread appetizer recipes with you so you can make this super easy and healthy flatbread to enjoy during the big game! This recipe is completely Gluten-Free and Keto-friendly, simple to make, and very versatile - you can enjoy it as is or add your favorite toppings to customize your flatbread any way you like. And if you're like me, you'll want to make more than one so you don't have to share!
This week's recipe feature: Super Easy and Healthy Flatbread Appetizer
This healthy flatbread appetizer recipe only requires a few wholesome ingredients as the base and is incredibly versatile - so go ahead and get creative with your toppings. Since we are having a small group over for the Super Bowl game, I decided to make one of my favorite flatbread combinations for everyone to enjoy - Caprese Flatbread!
Ingredients (makes about 4 slices):
- 3/4 cup low moisture mozzarella cheese, shredded
- 1 tbsp cream cheese
- 1 egg
- 2 tbsp almond flour, fine
- 1/4 cup spinach, cooked and drained (about 2 cups raw baby spinach)
- Dash garlic powder, to taste
- Dash salt and pepper, to taste
- 1 organic round tomato
- 2-3 oz fresh mozzarella cheese
- Fresh Basil leaves
- Drizzle of olive oil (optional)
Instructions:
Preheat oven to 350 degrees Fahrenheit.
In a microwave-safe bowl, melt mozzarella cheese and cream cheese in the microwave in 30-second bursts, mixing to combine in between intervals.
Once the cheese is completely melted and combined, mix in egg, almond flour, spinach, and seasoning (salt and garlic powder to taste). Mix well!
Flatten the mixture out on top of a baking sheet lined with parchment paper (about 1/4 in thick).
Bake for 15-18 minutes, then flip the flatbread over and top with tomato slices and fresh mozzarella slices. Bake for an additional 5 minutes to crisp the other side (and until mozzarella cheese is melted). **For crispier crust, bake for 8-10 minutes.
Let cool and top with basil leaves and drizzle of olive oil (if desired). Slice into 4 pieces and enjoy!
** Note, I added the basil leaves prior to additional baking and they turned brown. Not so pretty, but still very tasty! I recommend adding the basil after the flatbread is completely cooked.
