It's a New Year and I have a new recipe for you that is sure to please every WAFFLE lover! This Gluten Free Cinnamon Waffle recipe is super easy to make and absolutely delicious! Even better, these waffles are packed with nutrients and won't leave you feeling bloated and too full to move!

This week's Recipe Feature: Gluten Free Cinnamon Waffles

Now before I give you the recipe, I must give props to my brother, who bought us the best waffle / pancake maker from Black and Decker for Christmas, and to Rachel for inspiring this recipe! I also have to give props to my husband, who offered to be a ginny pig and taste test these waffles for me this past weekend. The verdict = my gluten-loving hubby LOVED his gluten free waffles!

Ingredients: (Make 1 large Waffle or 4 small squares)

  • 1 large egg
  • 1/3 cup Gluten Free Rolled Oats
  • 2 tbsp. Coconut Flour
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/2 cup unsweetened vanilla almond milk
  • 1/2 banana

Instructions:

  1. Blend all ingredients together in a blender
  2. Pour 1 cup of batter onto heated waffle iron (sprayed with non-stick coconut oil) and cook as instructed.
  3. Top waffles with fresh blueberries (or banana slices) and pure maple syrup! 

That's all there is to it! Super simple (wholesome) ingredients make for super simple and VERY tasty waffles! Again, this recipe is very versatile so feel free to add some of your favorite ingredients to the batter (i.e. Flaxseeds or Chia seeds, peanut butter, Greek yogurt...) and go crazy on the [HEALTHY] toppings (i.e. Fresh fruits, natural nut butter, coconut butter...)!
