Looking for a super easy breakfast (or morning snack) option for the busy work-week? I have the perfect recipe for a week-long grab-n-go breakfast that is not only delicious and filling, but it takes less than 5 minutes to prepare (and under 30 minutes to bake)!

I made these tasty little muffins last week and they were the perfect breakfast / morning snack to keep me fueled for my busy morning commute during the work-week. You can add any other veggies of your choice and extra spices if you prefer, but the base recipe is so easy and you may find that you have many of the ingredients already at home!

Ingredients: (Makes 12 muffins)

  • 2 cups chopped/ shredded baby spinach (stems removed)
  • 1 1/4 cup Fat-free Shredded Cheese
  • 4 cups Liquid Egg Whites
  • Red Chili Flakes (optional) (or other spices of your choice)

Preheat oven to 350F, fill egg tins with ingredients (in the order listed), and bake for 25 minutes (or until egg whites are completely cooked through and tops slightly brown).

That's all there is to it, my friends! Easy as 1, 2, 3... devour! Each little muffin is only 70 calories and packed with nearly 14g protein! The muffins can be stored in an air-tight container in the refrigerator for up to 7 days and are easily transported for healthy eating on the go!
